Specialty Mushrooms, Grown Locally
Every mushroom on our list is grown right here — specialty varieties you won't find at a regular grocery store, delivered at the peak of freshness so you get the flavour and texture they're known for.
The king of the oyster family. Thick, dense stems with a rich, savoury umami depth that holds up beautifully to high heat. The texture is often compared to scallops or abalone — satisfying and substantial.
Best for: Pan-searing, roasting, risotto, stir-fries, pasta, or sliced into "scallops."
A striking variety of King Oyster with dark, almost black caps and dense, meaty flesh. Deeper in flavour than standard King Oyster — earthy, rich, and visually stunning on the plate.
Best for: Grilling, searing, elegant plating, ramen, and umami-forward dishes.
A visually gorgeous variety with silvery-blue caps that fade to pale grey as they mature. Delicate, subtly sweet flavour with a tender texture. One of the most beautiful mushrooms you can put on a plate.
Best for: Quick sautés, soups, light pasta, eggs, and showcasing the natural colour.
Named for their warm brown caps and distinctly nutty, earthy flavour. Chestnut mushrooms are firm and hold their shape through long cooks — making them one of the best options for hearty, cold-weather dishes.
Best for: Soups, braises, risotto, pasta sauces, stews, and sautéed on toast.
Unlike any other mushroom. Lion's Mane has a shaggy, cascading appearance and a flavour profile reminiscent of crab or lobster — mild, sweet, and oceanic. A favourite for plant-based cooking and adventurous chefs alike.
Best for: Pan-searing as a "crab cake" substitute, bisques, tacos, and elegant appetizers.
Petite, clustered, and ivory-white with a mild, lightly nutty flavour. Shimeji are a staple of Japanese cuisine — delicate enough to let other flavours shine while adding a pleasant, firm texture that holds up to heat.
Best for: Miso soup, hot pot, udon, stir-fries, rice dishes, and garnishing.
The bolder sibling to White Shimeji — same cluster growth and firm texture, but with a richer, more pronounced earthy flavour. Brown Shimeji add depth to any dish without overwhelming it.
Best for: Risotto, pasta, sautéed butter dishes, ramen, and any recipe that calls for deeper mushroom flavour.

We deliver Mondays, Wednesdays, and Fridays. Submit your order at least 24 hours before your chosen delivery day to guarantee availability.
We Bring Them to You
Your mushrooms are harvested fresh and delivered directly to your door within the Kelowna and surrounding areas delivery zone.
